01

38mm 7-star conical burr — consistent, every time

Seven cutting edges on a conical burr produce a consistent bi-modal grind — a natural mix of medium and fine particles that works beautifully across every brew method you'll want to try. You're not locked into one style. You're free to explore all of them.

02

Solid wood + aluminum alloy construction

The body is machined aluminum alloy — not plastic. The handle knob and accent band are solid wood. It feels like a precision tool because it is one. Fits in a bag, survives travel, looks good on any counter.

Stainless steel SS420 burr — stays sharp

SS420 hardened stainless steel holds its edge longer than ceramic alternatives at this price point. No metallic taste transfer. Consistent grinds from the first use to the hundredth.

Internal stepped adjustment — easy to dial in

Grind size is adjusted internally via a stepped mechanism — each click is a repeatable, consistent setting you can come back to every time. No tools, no guessing. Find your setting once and lock it in.

Brew guide

Works with every methodyou'll want to try.

The 7-star conical's versatility is the point — you're still figuring out which brew method you'll fall in love with. The Onyx covers all of them while you decide.

The best starting point. Forgiving, fast, and produces an incredible cup with almost any technique. If you've never brewed specialty coffee before, start here — you'll be hooked after the first press.

Medium roast 1–2 min brew Most forgiving

Medium-coarse setting. The Onyx produces a consistent enough grind for V60 and Kalita Wave — you'll notice cleaner extraction compared to any blade grinder immediately.

Light–medium roast 2:00–3:00 min Clean body

The conical burr excels at the medium-fine range needed for moka pot. Rich, espresso-style extraction without an expensive machine — perfect for the beginner setup.

Medium–dark roast 5–7 min brew Espresso-style

Coarsest setting — full immersion brewing. Produces a full-bodied cup that showcases the depth of a good medium-dark roast. Simple, unhurried, deeply satisfying.

Medium–dark roast 4 min steep Full body

Starting point, not a rule. Grind settings vary by bean, roast date, and humidity. Adjust finer if your brew tastes weak or sour, coarser if it tastes bitter or heavy.

Common questions

Answered.

What does a conical burr do that a blade grinder can't?

A blade grinder chops randomly — producing dust and chunks in the same brew, causing uneven extraction. A conical burr like the Onyx Claw crushes beans to a consistent bi-modal size, which means even extraction, full flavor, and a cleaner cup every time.

How does the Onyx compare to the Gik Fang?

The Onyx uses a 38mm conical burr — versatile across all brew methods, approachable price. The Fang uses a 49mm ghost teeth burr optimized for pour-over clarity and brightness. Both are precision instruments. The Onyx is the right choice if you brew across multiple methods. The Fang is for the dedicated pour-over brewer who wants to go deeper.

Will someone who wants the Fang be happy with the Onyx Claw?

Honestly — no. The Fang and the Onyx serve different stages of the coffee journey. The Onyx is for someone exploring brew methods and building the habit. The Fang is for someone who has already found their method and wants to go deeper into it. If you already know pour-over is your thing and you want the cleanest possible extraction — get the Fang. If you're still discovering what you love — get the Onyx and enjoy the process.

What brew methods does the Onyx work with?

All of them. AeroPress, drip, pour-over, moka pot, French press. The 7-star conical burr covers the full grind range from fine espresso to coarse French press. It's the most versatile starting point.

How do I clean it?

Disassemble by hand, brush out the burr with the included brush. Rinse the catch cup. Full clean takes under a minute. Deep clean every 2–4 weeks depending on use.
